Executive Chef Tantris Maison Culinaire
After completing his training at the “Institut Paul Bocuse” in Lyon, the German-Canadian worked in top French and international restaurants, most recently as head chef at the “Maison Troisgros” in Roanne. He is part of the Tantris Maison Culinaire team since 2020.
Pastry Chef Tantris Maison Culinaire
The experienced and passionate pastry chef Maxime Rebmann from Brittany has been part of our team since 2020 and is responsible for the entire pastry and bakery department. Maxime has worked, among others, in Tokyo at the restaurant Esquisse, and in Paris at the Hôtel Georges V and the restaurants Alain Senderens and Lasserre.
Directeur Tantris Maison Culinaire
Born in southern Germany, Matthias Hahn lived in France for two decades and, as corporate chef, oversaw the global restaurant projects of top French star chef Alain Ducasse. Since 2020 he is responsible for the entire Tantris Maison Culinaire.
Restaurant Manager Tantris
Since her parents were already working in the kitchen and service industry, it was an easy decision for the Munich native to pursue a career in gastronomy as well.
Her path led her, among other places, to Borchardt in Berlin, and for a long time, the Goldene Bar in Munich was one of her main workplaces. Since 2021, she has been an integral part of the team, advancing through several internal career steps. Since December 2024, she has been leading the restaurant Tantris together with Maximilian Sierk-Paul.
Restaurant Manager Tantris
Born in Munich, Maximilian began his career at the age of fifteen as a student intern at the Mandarin Oriental.
After completing his studies in Augsburg, he worked as an event manager and operations director. Before joining Tantris, he led the fine-dining restaurant Salt. He has been part of the team since 2020 and, since December 2024, has been co-leading the restaurant Tantris with Jenny Lang.

After completing his training, he pursued a degree in hotel management.
His career took him to South Tyrol, where he worked with Norbert Niederkofler and Gerhard Wieser at Hotel Castel. The Austrian then moved to Munich, working at Bar Schumann’s and later as Restaurant Manager at Les Deux. Further positions included working with Heinz Winkler at Residenz Winkler and from 2017 to 2022 in the Roomers Group.
In 2023, Jürgen joined Restaurant Tantris DNA as Restaurant Manager.
Chef Sommelier Tantris Maison Culinaire
After graduating from high school in Dortmund, Julian began his training on the island of Sylt at the Relais & Châteaux Hotel Stadt Hamburg.
His career then took him to the Hotel Königshof in Munich, Maine, USA, and Lake Lucerne in Switzerland.
Starting in 2012, he served as Chef de Rang and Deputy Restaurant Manager at the Hotel Königshof.
Since 2019 at Tantris, initially as a sommelier and, from early 2023, as Chef Sommelier.
Chef Bar Tantris
Jörg Krause has been part of the Tantris Maison Culinaire team since 2021. The seasoned bartender has worked in some of Munich’s finest bars, including “Schumann’s Bar,” the “Goldene Bar,” and Bar Gabanyi.
